At the L'Antellino oil mill we use the latest technological innovations to ensure correct management of the production process of extra virgin olive oil.

The attention of our mill technicians allows us to manage the production process in the best possible way, from the arrival of the olives at the mill to the correct management of the product's conservation.


The olives upon arrival are stored in containment bins, they pass through a defoliator that eliminates any residual leaves, ensuring that only the olives are transported to the washing machine where they are carefully washed to remove soil and impurities.

The pressing takes place with crushers that crush the olives, including the skins and stones, creating a homogeneous paste. This process is carried out at a controlled temperature to avoid the onset of oxidation processes.

The olive paste is slowly mixed in malaxation tanks to allow the oil droplets to coalesce. This process is carefully monitored to keep the temperature below 26°C, thus preserving the organoleptic properties of the oil.

The mill uses a cold extraction system, which can be performed by centrifugation. In this phase, the paste is separated into its components: oil, water and pomace (solid residues).

The centrifuge separates the oil from the vegetation water and the pomace, obtaining an extra virgin olive oil.

The freshly extracted oil is filtered to remove any impurities and residual particles. This process guarantees the clarity of the oil and prolongs its shelf life, keeping its sensory characteristics intact.

Temperature and lighting control are essential at this stage to maintain the quality of the oil.

The oil is bottled in dark glass containers or metal cans to protect it from light and air.

Bottling takes place in sterile environments to ensure maximum hygiene.

The mill is ICEA certified for the processing of organic olives.

Antellino is registered in the list of authorized processing mills by the Consortium of Tuscan IGP Oil.

We are equipped with a cold extraction system with low oxidative impact, annually revised and updated to meet customer needs, designed to guarantee a correct product from both an organoleptic and chemical point of view.

The mill is one of the phases that make up the oil supply chain and our company offers consultancy and assistance on all production phases.
